Gingerbread Spice Balls

These are a super easy, somewhat healthy Christmassy treat! Recipe care of Rachel Conners over at  Bakerita .

The good ol' bread recipe

Aimee: This is tried and true and it was requested that this be uploaded to this blog! It has been made into dinner rolls, dinosaurs that looked like chickens. This bread has been made by four year olds (whilst singing Frozen). It's basically foolproof!  Ingredients 2 tsp yeast 1 tsp sugar 150ml milk 150ml boiling water 500g bread flour (if you're making this in NZ you'll need gluten flour but I don't know how much, ask Mother) 1/2tsp salt 1 lightly beaten egg 30g melted butter Method Combine water and milk, dissolve sugar in liquid, sprinkle over yeast and wait a few minutes. Combine dry ingredients, make a well, add yeast-ey mixture as well as the egg and butter. Knead for 10 min or so until it's "ready" (haha I'm so descriptive). Leave in a lightly oiled bowl for an hour or so until doubled in size. Knock back, knead for a few more minutes, and shape into whatever form you please. Deliciously Ella's "Raw Brownies"

Perhaps better titled "Nutty Brownies", these Deliciously Ella treats are a gluten-free and dairy-free alternative to your standard brownie recipe.  Notes on ingredients/substitutions follow recipe. Creamy chicken macaroni cheese

Ingredients chicken thighs, boneless & skinless macaroni 50g butter 1 onion, finely chopped 2 cloves garlic, crushed 2 tsp dried oregano 600mL milk 2Tbsp flour 2-3 cups chopped washed spinach 1 ½ cup peas, cooked 1 cup freshly grated Parmesan 1 cup grated cheese zest of 1 lemon, plus a good squeeze of juice garlic croutons Method Preheat the oven to 180c. Season with chicken thighs with salt and pepper. Cook the macaroni until al dente (still firm to the bite), drain and stir through some olive oil so it doesn’t stick together. Set aside. Heat a large frying pan over a high heat. Add a splash of olive oil and the chicken thighs (whole). KFC Chicken

Ingredients 2 chicken breasts 1 egg 1 cup flour  1 tablespoon salt  2 tablespoons pepper  4 tablespoons paprika  1 tablespoon ground mustard  1 tablespoon thyme  1 teaspoon sweet basil  1 teaspoon ground oregano  1 tablespoon ground ginger  Method Mix the dry ingredients together. Cut the chicken breast into small tenders and cover with slightly beaten egg. Mix egg covered chicken into dry ingredients and fry in a small layer of oil.

Linguine with minted pistachio pesto

Nathanael: This was a recipe from my friend Seb Unger at Tait. When I was over at his house helping him build a playhouse for his kids I was invited for dinner and had this delicious pasta with fresh herbs from his garden. Ingredients 150g pistachios, unsalted and shelled, lightly toasted 1 handful mint leaves 1 handful parsley leaves 2 cloves garlic, peeled salt and freshly ground black pepper 150ml extra virgin olive oil 100g parmesan, finely grated 400g linguine (optional) 1-2 chicken thighs Method Reserve 2 tablespoons of nuts, then put the remainder in a food processor with the mint, parsley and garlic. Blitz for 10 seconds, then scrape down the bowl. Add a little salt and half the oil, then blitz for 5 seconds. Add about two-thirds of the cheese and the remaining oil and blitz for another 5 seconds. Pour into a large warm bowl and taste for seasoning.
