A Christmas message...

Image
To Nick and Aimee (aka The Grays Abroad) but also to Nathanael and Tim (The Grays Yet To Go Abroad...?) This is a blog of recipes that I hope you like and will enjoy cooking. Mostly these came from your mum, who went through her recipe books to find and photograph recipes that you've enjoyed over the years. It may be a while since some of you sampled Ponui-esque chocolate self-saucing pudding, for example. And one comes from me. :) Consider this also a work in progress; if you like, a place where recipes all the Grays especially miss (or are enjoying!) can continue to be shared and used, wherever you are. Watch this space...? Merry Christmas, and happy cooking! Love, Charlotte

Hazelnut Chocolate Truffles

Image
Ros: These come from an Edmonds cookbook, and are a little like Ferrero Rochers . If you can bear to part with them, they also make great Christmas presents; grouped into clusters or placed into small bowls, and wrapped in cellophane and ribbons.  Makes 42 truffles.

Seriously Deluxe Christmas Cinnamon Buns

Image
Charlotte: These cinnamon buns also include pistachio, orange and dark chocolate. They are so deliciously decadently (and filling !) that they should probably only be made once a year at Christmas. Though when I served them up to the Grays, they suggested possibly Easter as well. At least... Pistachio, Orange, and Dark Chocolate Cinnamon Rolls Recipe from Joy the Baker , adapted from The Pioneer Woman's original family recipe.   Makes about 16 rolls.

Festive Fruit and Nut Cake

Image
Ros: I was given this cake as a gift one Christmas. I thought it was so yummy that I grabbed the recipe, and it's become a Gray Christmas standard - especially as most of the family don't care for the traditional Christmas cake!

Aimee and Tim's Famous 3-minute Chocolate Mug Cake

Image
Ros: Aimee and Tim went through a stage of making many, many different mug cakes on the evenings that Jeff and I would go out. This is one of their best.

Lenten Fish Pie

Image
Ros: Even for people that don't like fish, this pie still seems to be a crowd-pleaser. Jeff and I both remember having fish pies just like this when we were younger.

Thai Green Chicken Curry

Image
Ros: A light but warming curry for a cold winter's night! This recipe comes from the Clevedon recipe book. It's handy for feeding a crowd with only a little chicken. (Very loaves and fishes.)

Lemon Meringue Pie

Image
Charlotte: I remember one time I made this dessert for Nathanael. I was at his Auckland family home and he'd gone off to work. I then proceeded to accidentally lock myself out and completely fail at finding the spare key. Since he had to drive all the way home to let me in, I figured making his favourite dessert for dinner that night was the least I could do...

The Kids' Favourite Chocolate Self-Saucing Pudding

Image
Ros: This reminds me of Ponui family camps with Don cooking mountainous quantities of a self-saucing pudding very similar to this one. Make sure you make this in a deep dish , in order to avoid overflowing dishes and blackened "turds" on the bottom of your oven...

Heather Sims' Pavlova With Lemon Filling

Image
Ros: This recipe is a never-fail, simple pavlova, and the lemony part is a great way of using up the leftover egg yolks.

Double Sized Lasagne

Image
Ros: All the Gray boys love pasta and lasagne. It's also a great recipe to make and freeze if you're making it for someone else who is sick etc. Serves 10-12.

Oriental Chicken Wings

Image
Ros: This recipe was given to me in my kitchen tea book, and it has always been very popular with the family! I have many a memory of small sticky fingers when these were being eaten. Serves 6.

The Best Frittata Ever

Image
Ros: The title for this recipe came from a comment Nathanael made one night after eating this. It is a delicious way of using up leftovers! Makes 6 servings.
