Heather Sims' Pavlova With Lemon Filling

Ros: This recipe is a never-fail, simple pavlova, and the lemony part is a great way of using up the leftover egg yolks.



Ingredients
  • 3 egg whites
  • 1 Tbsp cold water
  • 1 cup castor sugar
  • 1 tsp vinegar
  • 1/4 tsp vanilla 
  • 1 Tbsp cornflour
Method
 
Beat egg whites til stiff.

Add water. Beat til stiff again.

Add sugar 1 Tbsp at a time til stiff.

Sprinkle vinegar, vanilla and cornflour.

Bake at 160°C for 5 mins.

Turn off oven and leave it for 1 1/2 hours.

Lemon Filling
  • 3 egg yolks   
  • juice of 1 orange & 1 lemon
  •  a little grated rind 
  • 1/2 cup sugar
 Mix together and cook til it thickens.
