Lenten Fish Pie
Ros: Even for people that don't like fish, this pie still seems to be a crowd-pleaser. Jeff and I both remember having fish pies just like this when we were younger.
Ingredients
any type of pastry (optional)
Also optional: leek, celery, cheese on top of mashed potato/kumara
Method
1. Line tin with pastry and cook.
2. Flake fish, removing bones and skin.
3. Place on pastry and arrange egg on top.
4. Make a white sauce with the butter, flour, milk, salt and pepper. Taste and adjust flavour as necessary.
5. Pour white sauce over fish and eggs.
6. Cream mashed potato, spread over fish.
7. Brush potato with beaten egg.
8. Bake in moderate oven (350 - 375°F //175 - 190°C) for 30 minutes until browned.
Alternative crust
Ingredients
- 12 oz cooked white fish
- 2 hard boiled eggs sliced
- 1 oz butter
- 2 Tbsp flour
- 1 1/4 cups milk
- 1 tsp salt
- 1/4 tsp pepper
- 1 lb mashed potatoes/kumara
- extra butter and milk
- 1 egg

Alternative crust
- 2 cups cooked rice
- small onion, finely chopped and cooked in butter
- add egg to bind rice and onion together
