The Best Frittata Ever
Ros: The title for this recipe came from a comment Nathanael made one night after eating this. It is a delicious way of using up leftovers!
Makes 6 servings.
Ingredients

2. Cook kumara (microwave if desired).
3. Microwave broccoli (with a sprinkling of water - approx 2 Tbsp).
4. Heat pan with oil - add leek and garlic and cook 5 mins.
5. Cook bacon bits.
6. Layer all the above in a greased quiche dish.
7. Whisk eggs and milk.
8. Pour over frittata and top with grated cheese.
9. Bake 20 mins.

- 450g kumara (sliced & roasted slightly with olive oil spray)
- 1 leek (sliced)
- 2 garlic cloves
- 100g bacon bits (fried in a little oil)
- 200g broccoli (optional)
- 8 eggs
- 2 T milk
- 100g grated edam/mozarella
- feta (to taste)
