The Best Frittata Ever

Ros: The title for this recipe came from a comment Nathanael made one night after eating this. It is a delicious way of using up leftovers!

Makes 6 servings.


Ingredients 
  • 450g kumara (sliced & roasted slightly with olive oil spray)
  • 1 leek (sliced)
  • 2 garlic cloves
  • 100g bacon bits (fried in a little oil)
  • 200g broccoli (optional)
  • 8 eggs 
  • 2 T milk
  • 100g grated edam/mozarella
  • feta (to taste)

Method
1. Preheat oven to 210°C.

2. Cook kumara (microwave if desired).

3. Microwave broccoli (with a sprinkling of water - approx 2 Tbsp).

4. Heat pan with oil - add leek and garlic and cook 5 mins. 

5. Cook bacon bits.

6. Layer all the above in a greased quiche dish.

7. Whisk eggs and milk.

8. Pour over frittata and top with grated cheese.

9. Bake 20 mins.
